This competition attracts top high school students from around New Mexico who are enrolled in the ProStart Program at their schools. These students have proven their skill and commitment to the hospitality industry through vigorous coursework and on-the-job training.

The ProStart competition is composed of the culinary and management competitions. Teams participating in the culinary competition demonstrate their creative abilities through the preparation of a three-course meal in 60 minutes.

Teams participating in the management competition demonstrate their knowledge of the industry by competing in two different events, a case study and a quiz bowl (a question and answer game show-style event).

First place teams move on to compete at the National ProStart Student Invitational.
